Ultimate Blueberry Muffins

    These delicious muffins are moist and packed full of blueberries. They are freezer friendly and are the perfect treat anytime of the day.

    Makes: 12 muffins

    • 100g margarine
    • 200g caster sugar
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 250g plain flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 125ml milk
    • 325g blueberries
    • 2 tablespoons caster sugar

    1. Preheat oven to 230 C / Gas 8. Lightly grease a 12-hole muffin tin.
    2. In a large bowl, cream together margarine and 200g sugar. Beat in eggs and vanilla. Combine flour, baking powder and salt and stir into egg mixture alternately with the milk. Fold in blueberries. Spoon batter into prepared muffin tin and sprinkle with sugar.
    3. Bake in preheated oven for 5 minutes. Reduce heat to 190 C / Gas 5 and bake for 30 minutes more, until golden.

    I can't beleive how perfect these came out. My husband thought it was too much fruit but it was the right amount for me. The actual cake was lovely, this is the recipe I will be using for amending and trying my own flavours. Really really lovely  -  04 Feb 2012
