125ml soy sauce
125ml sherry or white cooking wine
125ml chicken stock
1/4 teaspoon ground ginger
1 pinch garlic granules
1 bunch spring onions, chopped
450g skinless, boneless chicken breast fillets, cut into 5cm pieces

In a small saucepan, combine the soy sauce, sherry, chicken stock, ginger, garlic granules and spring onions. Bring to the boil and immediately remove from heat. Set aside.
Preheat grill. Thread chicken pieces onto metal or bamboo skewers. Arrange on a grill pan that has been coated with cooking oil spray. Spoon 1 or 2 tablespoons of the sauce over each chicken skewer.
Place the pan under the grill and cook for about 3 minutes, until browned. Remove from the grill, turn over and spoon more sauce onto each one. Return to the grill until chicken is cooked through and nicely browned.
