Juicy chicken skewers

    A simple, yet incredibly delicious Japanese-inspired chicken dish. Chicken is grilled with a sherry and soy sauce mixture. Enjoy with freshly cooked rice.

    Makes: 5 servings

    • 125ml soy sauce
    • 125ml sherry or white cooking wine
    • 125ml chicken stock
    • 1/4 teaspoon ground ginger
    • 1 pinch garlic granules
    • 1 bunch spring onions, chopped
    • 450g skinless, boneless chicken breast fillets, cut into 5cm pieces

    1. In a small saucepan, combine the soy sauce, sherry, chicken stock, ginger, garlic granules and spring onions. Bring to the boil and immediately remove from heat. Set aside.
    2. Preheat grill. Thread chicken pieces onto metal or bamboo skewers. Arrange on a grill pan that has been coated with cooking oil spray. Spoon 1 or 2 tablespoons of the sauce over each chicken skewer.
    3. Place the pan under the grill and cook for about 3 minutes, until browned. Remove from the grill, turn over and spoon more sauce onto each one. Return to the grill until chicken is cooked through and nicely browned.

    Easy and bursting with flavor. I adapted this recipe for whole chicken pieces. I just poured the marinade over it, and baked it uncovered at 400 for nearly an hour. I basted it every fifteen minutes and the results were fabulous.  -  24 Jun 2009  (Review from Allrecipes US | Canada)

    This was very nice. I did it as a satay (long strips of chicken on skewers) and served it on a salad with fresh bean sprouts and crispy rice noodles.
