About this recipe: This cookie is a great alternative to the tradition birthday cake. It's made in a pizza pan, dotted with chocolate chips, baked, topped with whipped cream, walnuts, coconut and M&Ms.


Makes: 1 12 inch cookie

  • 110g dark brown soft sugar
  • 4 tablespoons caster sugar
  • 110g butter, softened
  • 1 teaspoon vanilla extract
  • 1 egg
  • 150g plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 175g plain chocolate chips
  • 250ml sweetened whipped cream
  • 4 tablespoons chopped walnuts
  • 4 tablespoons desiccated coconut
  • 100g M&Ms or Smarties

Prep:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Preheat oven to 180 C / Gas 4.
  2. In a medium bowl, cream together the dark brown soft sugar, caster sugar and butter until smooth. Mix in egg and vanilla. Combine the flour and bicarbonate of soda; stir into the batter. Dough will be stiff. Mix in chocolate chips. Spread or pat dough onto an ungreased 12 inch pizza pan or baking tray..
  3. Bake for 15 minutes in the preheated oven or until golden brown; let cool.
  4. Just before serving, spread cookie with whipped cream. Sprinkle with nuts, coconut and M&Ms. Cut into wedges. Refrigerate any leftovers.

Loved this recipe, the easiest Birthday cake I have made. I didn't decorate it with the suggested toppings, just put some candles on it. I baked it on a pizza tray lined with foil backed baking paper and it turned out perfectly. Everyone loved it. I will definitely make this again. - 08 Aug 2014


terrible , really disappointed , I was making this for my sons 16 th birthday , the recipes advised putting dough on a pizza tray which i did , the mixture did run down through the hole s but this was actually a blessing because it saved me from decorating what was basically a lump of salt , the recipe included bicarb which i did add and the correct amount , when i tasted the bits that had leaked through the tray i had to spit them out -- completely disgusting salty taste ruining the cookie , such a disappointment and as i did not have time to bake another one 16 year old without his birthday treat ! - 25 Oct 2013


Made this cookie for my son's birthday using giant chocolate buttons instead of M&Ms. I was surprised the texture of the mix was not dough like at all. I added a little extra flour but then decided to spread the mixture evenly on the pizza tray. The result was brilliant. The kids loved it and we will definitely use this recipe again. - 08 Oct 2013
