    About this recipe: This pasta salad is guaranteed to be a hit. It combines delicious flavours from the Med in one dish. Pasta is tossed with roasted red peppers, olives, mozzarrella, tomatoes and salami in a balsamic dressing.

    Serves: 6 

    • 450g dry penne pasta
    • 340g roasted red peppers
    • 200g black olives, chopped
    • 1 small onion, chopped
    • 1 clove garlic, finely chopped
    • 450g mozzarella cheese, cubed
    • 5 plum tomatoes, chopped
    • 115g salami, cut into strips
    • 175ml olive oil
    • 125ml balsamic vinegar
    • ground black pepper to taste

    1. Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain and rinse under cold running water until cool.
    2. Mix together: red peppers, olives, onion, garlic, mozzarella cheese, tomatoes and salami.
    3. Combine in large bowl, pasta and vegetable mixture. Pour in olive oil, balsamic vinegar and black pepper. Mix everything well.
