Smoked Sausage Pasta Bake
Once you make this pasta dish, it will become a firm favourite. Pasta is mixed with smoked sausage and a tomato sauce, topped with breadcrumbs and cheese, then baked to perfection.
Ingredients
Serves: 8
- 450g rigatoni pasta
- 450g kielbasa sausage, sliced diagonally
- 2 tablespoons vegetable oil
- 3 (400g) tins whole plum peeled tomatoes
- 675g passata
- 1 teaspoon dried oregano
- 4 tablespoons chopped fresh parsley
- 1/2 teaspoon ground black pepper
- 4 tablespoons Italian-style dry breadcrumbs
- 225g grated Monterey Jack cheese

- Preheat oven to 180 C / Gas 4.
- Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a medium frying pan over medium-high heat, cook sausage in oil until browned on both sides, 5 minutes.
- In a large bowl, combine pasta, sausage, tomatoes, passata, oregano, parsley and pepper. Mix well. Pour into 20x30cm baking dish. Sprinkle with breadcrumbs and top with grated cheese.
- Cover with foil and bake in preheated oven 30 minutes. Remove foil and bake 10 to 15 minutes more, until top is golden.
Kielbasa
Are Polish smoked sausages and can be found in Polish delis. If unavailable, use Mattessons smoked sausage instead.

Used different ingredients. didnt have any passata so used mushroom and tomato pasta sauce - 26 May 2011
I'm close to giving this recipe a 2, which is rare for me. I'm pretty easy to please. I will not prepare it again without some modifications. As is, it's too dry. I may cut the kielbasa in smaller chunks for wider disbursement. I thought the taste was rather generic, and would benefit from some stronger flavors like garlic, crushed red pepper flakes, etc. - 26 Apr 2006 (Review from Allrecipes US | Canada)
