Fiery Macaroni Salad

    A tasty pasta salad, which is perfect for those who love their food hot. Macaroni is tossed with a chilli-spiced mayonnaise. Enjoy as a side dish or for lunch.

    Makes: 6 

    • 225g uncooked macaroni
    • 185g mayonnaise
    • 2 tablespoons cider vinegar
    • 1 teaspoon sugar
    • 1 teaspoon sea salt
    • 1/4 teaspoon white pepper
    • 25g spring onions, sliced
    • 2 jalapeno chilli peppers, seeded and chopped or Scotch bonnet chillies to taste

    1. Bring a large pot of lightly salted water to the boil. Add macaroni and cook until tender, about 8 minutes. Drain and rinse under cold running water.
    2. In a large bowl, mix together the mayonnaise, vinegar, sugar, salt, pepper, spring onions and chillies. Stir in the macaroni. Refrigerate until chilled before serving, at least 30 minutes.
