100ml (4 fl oz) groundnut oil
4 tablespoons rice wine vinegar
4 tablespoons soy sauce
4 tablespoons fresh lemon juice
4 cloves garlic, minced
10 sprigs fresh coriander, finely chopped
1 dessertspoon dried crushed chillies
1 dessertspoon minced fresh root ginger
