Baked garlic jalapeño trout

    A gorgeous baked fish dish. A whole trout is stuffed with lemon, onion and garlic, rubbed with butter and topped with spicy jalapeño, then baked in a foil parcel. Serve with steamed rice and a fresh green salad for a healthy and tasty baked fish dinner.

    Serves: 1 

    • 1 whole (300g) trout - cleaned, head and tail removed
    • 1 clove garlic, minced
    • 1/4 yellow onion, chopped
    • 1/2 lemon, juiced
    • 1/2 jalapeño, seeded and diced
    • 1 teaspoon butter
    • 1/2 teaspoon garlic salt
    • salt and pepper to taste

    1. Preheat oven to 200 C / Gas 6.
    2. Fill the cavity of the trout with the garlic, onion and lemon juice. Rub trout with butter, and place on a large piece of aluminium foil. Season with garlic salt, salt and pepper. Place the diced jalapeño on top of the trout and seal in the foil.
    3. Bake trout 25 minutes in the preheated oven, or until easily flaked with a fork.

    I am not a but fish fan but one my hubby's friends at work keeps giving us trout so I decided to give this a whirl (and my freezer is getting filled). I didn't really eat it but my father and step mother loved it. They thought the garlic flavor was outstanding. I gave them 5 big fish and they ate them all.
