220g dark brown soft sugar
100g caster sugar
4 tablespoons water
1 teaspoon vanilla extract
125g plain flour
1 teaspoon salt
1/2 teaspoon bicarbonate of soda
1 tablespoon ground cinnamon
245g porridge oats

Preheat oven to 180 C / Gas 4 and grease baking trays.
In a medium bowl, cream together the margarine, dark brown soft sugar and caster sugar. Stir in the egg, water and vanilla. Combine the flour, salt, bicarb and cinnamon and stir into the creamed mixture. Finally, stir in the oats. Drop by rounded spoonfuls onto the prepared baking trays.
Bake for 12 to 15 minutes in the preheated oven. Cool on baking trays for a couple of minutes before removing to cool on wire racks.
