About this recipe: Tinned pears produce the best results. Lemon or orange zest may also be added for a citrus twist.


Serves: 15 

  • 100g (4 oz) plain flour
  • 100g (4 oz) wholemeal flour
  • 1 1/2 teaspoons bicarbonate of soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 225g (8 oz) tinned pears, sliced
  • 225g (8 oz) natural yoghurt
  • 4 tablespoons vegetable oil
  • 5 tablespoons honey
  • 1 egg, beaten

  1. Preheat oven to 190 C / Gas mark 5. Grease muffin tin, or line with paper muffin cases.
  2. Mix together flours, bicarbonate of soda, baking powder, salt, cinnamon and nutmeg. Stir pears lightly into dry ingredients.
  3. In a large bowl, combine yoghurt, oil, honey and egg. Mix in flour mixture until just moistened. Spoon into muffin tin.
  4. Bake for 20 to 25 minutes, or until a cocktail stick inserted into the centre of a muffin comes out clean.

Used different ingredients. used fresh pears instead of tinned, substituted apple sauce for oil & used fat free yoghurt - 14 Jul 2008


Tasty & we used fresh ripe pears but did sink a bit after coming out of oven - 29 Sep 2013
