    About this recipe: Creamy, crunchy, sweet and tart flavours and textures, all in one chicken pasta salad. Cooked chicken and penne pasta tossed with celery, cranberries and spring onions in lemon juice and a creamy poppy seed dressing. Perfect for picnics, barbecues or a light summer lunch.

    Serves: 12 

    • 450g penne pasta
    • 200g cubed cooked chicken
    • 2 sticks celery, chopped
    • 120g dried cranberries
    • 4 spring onions, chopped
    • 350ml creamy poppy seed salad dressing (like Brianna's®)
    • 2 teaspoons lemon juice

    1. Bring a large pan of lightly salted water to the boil. Add the penne pasta, and cook until al dente, 8 to 10 minutes. Drain, and rinse under cold water until the pasta is cold; drain well.
    2. Place the drained pasta into a large mixing bowl, and stir in the chicken, celery, cranberries and spring onions. Pour in the salad dressing and lemon juice; stir until evenly mixed.


    If you can't find the poppy seed salad dressing, this would be equally delicious with an Italian dressing or homemade honey mustard vinaigrette.
