Poppy seed and cranberry chicken pasta salad

    Creamy, crunchy, sweet and tart flavours and textures, all in one chicken pasta salad. Cooked chicken and penne pasta tossed with celery, cranberries and spring onions in lemon juice and a creamy poppy seed dressing. Perfect for picnics, barbecues or a light summer lunch.

    Serves: 12 

    • 450g penne pasta
    • 200g cubed cooked chicken
    • 2 sticks celery, chopped
    • 120g dried cranberries
    • 4 spring onions, chopped
    • 350ml creamy poppy seed salad dressing (like Brianna's®)
    • 2 teaspoons lemon juice

    1. Bring a large pan of lightly salted water to the boil. Add the penne pasta, and cook until al dente, 8 to 10 minutes. Drain, and rinse under cold water until the pasta is cold; drain well.
    2. Place the drained pasta into a large mixing bowl, and stir in the chicken, celery, cranberries and spring onions. Pour in the salad dressing and lemon juice; stir until evenly mixed.


    If you can't find the poppy seed salad dressing, this would be equally delicious with an Italian dressing or homemade honey mustard vinaigrette.

    Sounded great so I chose to make it for a cookout. Yum! I did add to it tho - Cheese that I cubed, sliced olives, then I cut up (small pieces)steamed broccoli - cooled. I added a little more dressing since I added more veggies (& broccoli soaks up liquid!)So delicious and I was asked to make for Memorial Day Cookout as well!     this was soooo good. a nice change from traditional pasta salad. I added a few slivered almonds for a little more crunch. easy to make also. big hit at the picnic (and no mayo to worry about in the heat). i also used the rotisserie chicken from the store  -  11 Jul 2010  (Review from Allrecipes US | Canada)
