Packed lunch pitta pockets

    Here's a recipe for a healthy, tasty school lunch 'sandwich' that the kids can take with them and assemble themselves at their lunch table! These are made with deli ham, fresh veggies and ranch salad dressing but there are loads of variations that will work including: Chopped pepperoni, mozzarella cheese and pizza sauce; chopped bacon, shredded lettuce, chopped tomato and ranch dressing; or sliced apples and peanut butter.

    • 70g deli ham, chopped
    • 30g shredded lettuce
    • 30g shredded carrot
    • 4 tablespoons ranch salad dressing
    • 1 pitta bread, cut in half

    1. Place ham, lettuce and carrot in a resealable plastic bag. Pour salad dressing into a small resealable container. Wrap the pita bread in cling film. Pack the ham mixture, ranch dressing and pitta bread along with a spoon in a lunch box or bag until lunch time.
    2. Assemble pitta pocket by spooning the ham mixture into each pita half and drizzling the ranch dressing on top.

    My niece just loved this and it was perfect for her "snack time" at school. She's too little to assemble the pita herself or at least that's my thought so I assembled it for her and added some cheddar cheese.
