    About this recipe: The savoury richness of Cheddar cheese balanced by the tartness of cider vinegar adds a beautiful blend of flavours to the mayonnaise mixture of this yummy chilled macaroni salad. Packed with veg like green pepper, celery, tomatoes and onion, this is a gorgeous pasta salad for picnics at the park or barbecues with your mates!

    Serves: 6 

    • 160g macaroni pasta
    • 2 tablespoons cider vinegar
    • 120g grated Cheddar cheese
    • 75g chopped green pepper
    • 30g chopped celery
    • 20g thinly sliced spring onion
    • 8 cherry tomatoes
    • 250g mayonnaise
    • salt and pepper to taste
    • 1/8 teaspoon onion powder
    • 1/8 teaspoon celery salt

    1. In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
    2. In a large bowl, combine pasta and vinegar. Mix well and allow to sit 15-20 minutes.
    3. Add cheese, peppers, celery, spring onions, tomatoes, mayonnaise and seasonings. Mix well and refrigerate until chilled.
