About this recipe: A deliciously wonderful alternative to beef burgers, these minced chicken burgers serve up a wallop of flavours with Granny Smith apple and maple syrup in the burger mince mixture, a topping of more apple with onion and a gorgeous maple mustard sauce.

Serves: 6

  • 4 tablespoons mayonnaise
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons rapeseed oil
  • 1 onion, sliced
  • 1 Granny Smith apple - peeled, cored and chopped
  • 450g chicken mince
  • 2 tablespoons maple syrup
  • 1 teaspoon Italian seasoning
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 tablespoons rapeseed oil
  • 6 burger buns, split

  1. Make the sauce by whisking the mayonnaise, 2 tablespoons maple syrup and the Dijon mustard together in a small bowl; set aside.
  2. Heat 2 tablespoons rapeseed oil in a frying pan over medium heat; cook and stir the onion and about half of the chopped apple in the hot oil until soft, 7 to 10 minutes. Set aside.
  3. Mix the remaining uncooked apple, the minced chicken, 2 tablespoons maple syrup, Italian seasoning, egg, salt and pepper together in bowl. Shape the burger mixture into 6 balls; the mixture will be loose, but that is okay.
  4. Heat 1 tablespoon rapeseed oil in a large frying pan over medium heat. Place one of the balls into the hot oil and flatten with the back of spoon to create a burger. Cook until slightly brown on one side and then flip and cook the other side until cooked through, 5 to 7 minutes per side; repeat for each portion.
  5. To assemble, place the chicken burgers on buns; top with the reserved cooked apple and onions. Pour some sauce over the top of each burger; more sauce can be served on the side if desired.

Chicken mince

Chicken mince can be hard to find at the shops, so you can use turkey mince which will also work well in this recipe!
