Diet Tuna Salad

About this recipe:
A low fat, easy and delicious tuna salad. I can't believe how much I like this! The recipe can easily be multiplied. Serve on top of lettuce.
1 tin tuna in water, drained
50g red or white onion, chopped
50g tomatoes, diced
fresh coriander leaves, chopped
1 small jalapeno pepper, seeded and minced
salt and pepper to taste
- In a medium bowl, stir together the tuna, onion, tomatoes, coriander and jalapeno. Season with salt and pepper. Refrigerate until serving.
Lovely. Lots of flavour which Tuna needs.

Makes a lovely light lunch when served with salad leaves.
