Diet Tuna Salad

    A low fat, easy and delicious tuna salad. I can't believe how much I like this! The recipe can easily be multiplied. Serve on top of lettuce.

    Ingredients
    Serves: 2 

    • 1 tin tuna in water, drained
    • 50g red or white onion, chopped
    • 50g tomatoes, diced
    • fresh coriander leaves, chopped
    • 1 small jalapeno pepper, seeded and minced
    • salt and pepper to taste

    1. In a medium bowl, stir together the tuna, onion, tomatoes, coriander and jalapeno. Season with salt and pepper. Refrigerate until serving.

    I did not have a raw jalapeno pepper on hand. I ended up chopping a few homemade pickled jalapeno rings and throwing it in. I did squeeze a little fresh lime juice over the ingredients before mixing. I love this recipe. I didn't bother eating it as a dip, I just ate it right out of the bowl. I didn't even share.
