    Pineapple and brown sugar glaze for gammon

    About this recipe: A simple, sweet glaze for bolied ham or gammon - it's simply pineapple juice and brown sugar. The cherries are optional but I suppose traditional! If you could also add a teaspoon of French mustard.

    Serves: 14 

    • 1 tin sliced pineapple, drained with juice reserved
    • 100g glace cherries, drained
    • 225g brown sugar

    1. Before baking ham for the final hour, place pineapple slices on top with a cherry in centre of each ring (if using).
    2. In a medium microwave safe bowl combine brown sugar and reserved pineapple juice. Mix together and microwave for about 5 minutes, until mixture is thick. Pour some of this glaze over the ham about every 15 minutes in the last hour of baking, until all is used.
