Pineapple and Walnut Cake

About this recipe:
Tinned crushed pineapple, cinnamon and chopped walnuts make this a moist and delicious cake. The quick and easy icing is optional.
250g plain flour
2 teaspoons bicarbonate of soda
400g caster sugar
2 teaspoons ground cinnamon
600g crushed pineapple with juice
100g walnuts, chopped
For the icing
120g icing sugar
2 tablespoons semi skimmed milk

Preheat oven to 175 degrees C/Gas Mark 4. Grease and flour a 23x33 cm/9x13 inch cake tin.
In a large bowl, mix together the flour, sugar, bicarbonate of soda and cinnamon. Add the eggs, pineapple and nuts, mix until well blended. Pour into the prepared cake tin.
Bake for 45 minutes in the preheated oven, until a skewer inserted comes out clean. Set aside to cool on a wire rack.
For the icing: In a small bowl, stir together the icing sugar and milk until smooth, spread over cooled cake.
A RECIPE FOR DIABETES. This cake was a disaster. So extremely over sweet and came out of the oven a gooey, runny mess. I'm an experienced cake maker and I have never come accross another cake recipe which states such a large amount of sugar. A waste of time and a waste of ingredients - avoid!!!
