    About this recipe: Tender chicken with a touch of sweet pineapple barbecued on skewers - great for kids at a barbecue party.

    Ingredients
    Serves: 10 

    • 225ml (8 fl oz) pineapple juice
    • 100g (4 oz) dark brown soft sugar
    • 5 tablespoons light soy sauce
    • 1kg (2 1/4 lb) chicken breast mini fillets
    • skewers

    Method
    Prep:30min  ›  Cook:10min  ›  Ready in:40min 

    1. In a small saucepan over medium heat, mix pineapple juice, brown sugar and soy sauce. Remove from heat just before the mixture comes to the boil.
    2. Place chicken in a medium bowl. Cover with the pineapple marinade, and refrigerate for at least 30 minutes.
    3. Preheat barbecue for medium heat. Thread chicken lengthwise onto wooden skewers.
    4. Cook chicken 5 minutes per side, or until juices run clear. They cook quickly, so watch them closely.

    My dad used to make these when we were younger. Can't remember what the chicken was coated in tho we used to have chicken, bacon, pineapple, red onion, baby mushrooms and tomatoes on ours. Delish. Also.... you can cook them in the oven (gas mark 5/6 in centre) for about 20-25 minutes turning halfway. Just make sure you put them on tin foil or the chicken will stick to the tray. - 16 Mar 2015

    Used different ingredients. Excellent recipe! I too added vegies to this dish (green pepper, broccoli and onion) which I marinated overnight and added some seasonings and a bit of hot sauce to the mixture. Just make sure you don't marinate the meat and vegetables together. As others, I served this over rice and my gang absolutely loved it! Terrific Hillary! - 24 Jul 2008

    Used different ingredients. Wow! These are beautiful and great tasting! I added chunks of pepper, pineapple and served with white rice. The only thing I would do differently next time is marinate much longer than 30 minutes. Yum!! - 24 Jul 2008
