    About this recipe: This is an old recipe I have for chocolate-coffee icing. Simply perfect for decorating a coffee and walnut cake or pipe on top of chocolate cupcakes. The recipe makes enough to cover a 20cm layered cake.

    Serves: 12 

    • 30g unsweetened cocoa powder
    • 80ml strong, hot, brewed coffee
    • 350g icing sugar
    • 75g melted butter
    • 1/8 teaspoon salt
    • 1 teaspoon vanilla extract
    • 30g chopped walnuts (optional)

    1. Combine coffee and cocoa in a bowl; beat until blended. Add sugar, melted butter, salt and vanilla; beat until blended. Scrape down the bowl and continue to beat icing until it has a spreading consistency.
    2. Ice the cake or cupcakes as desired. Top with chopped walnuts if desired.
