About this recipe:This is an old recipe I have for chocolate-coffee icing. Simply perfect for decorating a coffee and walnut cake or pipe on top of chocolate cupcakes. The recipe makes enough to cover a 20cm layered cake.
30g unsweetened cocoa powder
80ml strong, hot, brewed coffee
350g icing sugar
75g melted butter
1/8 teaspoon salt
1 teaspoon vanilla extract
30g chopped walnuts (optional)

Combine coffee and cocoa in a bowl; beat until blended. Add sugar, melted butter, salt and vanilla; beat until blended. Scrape down the bowl and continue to beat icing until it has a spreading consistency.
Ice the cake or cupcakes as desired. Top with chopped walnuts if desired.
