Mocha coffee icing

    This is an old recipe I have for chocolate-coffee icing. Simply perfect for decorating a coffee and walnut cake or pipe on top of chocolate cupcakes. The recipe makes enough to cover a 20cm layered cake.

    Ingredients
    Serves: 12 

    • 30g unsweetened cocoa powder
    • 80ml strong, hot, brewed coffee
    • 350g icing sugar
    • 75g melted butter
    • 1/8 teaspoon salt
    • 1 teaspoon vanilla extract
    • 30g chopped walnuts (optional)

    Method
    Prep:15min  ›  Ready in:15min 

    1. Combine coffee and cocoa in a bowl; beat until blended. Add sugar, melted butter, salt and vanilla; beat until blended. Scrape down the bowl and continue to beat icing until it has a spreading consistency.
    2. Ice the cake or cupcakes as desired. Top with chopped walnuts if desired.

    This recipe was ok, the flavor was good, but it was not what I would call "icing". It was kind of thin, closer to a glaze than icing, I had to add more powdered sugar to get a better spreading consistency.  -  13 Feb 2007  (Review from Allrecipes US | Canada)

    Delicious! Reminded me a bit of Terimasu! I did, however, make a few alterations! 1) I used esspresso instead of coffee (added amazing flavor... however, almost too much flavor) 2) I mixed the initial ingrediants in the blender for a bit, before adding the confectioners suger a bit at a time 3) I served with a dark chocolate cake, wich, although delicious, proved to be to much.     good flavor but as written doesnt work, i had to add almost double the amount of sugar to get a spreading consistency tried a second batch with about 1/2 the amount of coffee, and didnt melt the butter, and it worked much better  -  12 Sep 2010  (Review from Allrecipes US | Canada)
