About this recipe:This is the best chocolate cake I have ever eaten and the only chocolate cake I will ever make. Decorate it with your favourite icing.
400g caster sugar
65g cocoa powder
250g plain flour
1 1/2 teaspoons baking powder
235ml hot, freshly brewed coffee
2 teaspoons bicarbonate of soda
2 1/2 teaspoons vanilla extract

Preheat oven to 180 C / Gas 4. Grease and flour a 33x 23cm baking tin.
Cream the sugar and butter together until light and fluffy. Add the eggs and mix well. Stir in the cocoa, milk, flour, baking powder, hot coffee, bicarbonate of soda and vanilla extract. Mix until just combined. Pour the cake batter into the prepared tin.
Bake in preheated oven for 30 to 35 minutes or until a skewer inserted into the centre of the cake comes out clean.
If you prefer to make cupcakes, bake for 12 - 15 minutes.
