Peanut Butter and Chocolate Oatmeal Cookies

About this recipe: This chewy cookie has it all - oats, chocolate chips and peanut butter - for loads of decadent flavour.

Serves: 18 

  • 175g butter
  • 100g caster sugar
  • 220g dark brown soft sugar
  • 2 eggs
  • 85g peanut butter
  • 60ml water
  • 1 teaspoon vanilla extract
  • 200g plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 160g porridge oats
  • 170g plain chocolate chips

  1. Preheat oven to 180 C / Gas 4.
  2. In a medium bowl, cream together the butter and both sugars. Beat in the eggs one at a time, then stir in the peanut butter, water and vanilla. Combine the flour and bicarbonate of soda, stir into the creamed mixture. Finally, stir in the oats and chocolate chips. Drop by teaspoonfuls onto an unprepared baking tray.
  3. Bake for 8 to 10 minutes in the preheated oven, until the cookies are lightly toasted on the edges. Remove from the baking tray to cool on wire racks.
