Magnificent Banana Chocolate Chip Muffins

    My uncle's recipe for delicious muffins. Moist and sweet, they're a good way to use up bananas that are past their best.

    Serves: 24 

    • 110g butter, softened
    • 300g sugar
    • 1 teaspoon vanilla extract
    • 225g mashed banana
    • 4 tablespoons soured cream
    • 2 eggs, lightly beaten
    • 250g plain flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 170g plain chocolate chips

    1. Preheat oven to 180 C / Gas 4. Lightly grease 24 muffin cups, or line with paper cases.
    2. In a bowl, cream together the butter, sugar and vanilla. Mix in banana and soured cream. Stir in the eggs. In a separate bowl, mix the flour, baking powder and bicarbonate of soda. Mix dry ingredients into the banana mixture until evenly moist. Fold in chocolate chips. Transfer mixture to the prepared muffin cups, filling each cup about 3/4 full.
    3. Bake 25 minutes in the preheated oven, or until a knife inserted in the centre of a muffin comes out clean.

    These turned out really moist and tasted yummy. I added Greek yogurt instead of sour cream (as thats what i had in), and swirled in 100g of dark melted chocolate Yum Yum. A definite keeper  -  26 Oct 2012
