One egg cake

    An old recipe from Gran. A very easy cake to make for afternoon tea. Enjoy simply as is with a hot cuppa!

    Serves: 10 

    • 250g plain flour
    • 2 teaspoons baking powder
    • 200g caster sugar
    • 1 teaspoon salt
    • 110g butter
    • 1 egg
    • 250ml milk
    • 1 teaspoon vanilla extract
    • 1 teaspoon lemon extract

    1. Preheat oven to 180 C / Gas 4 grease and flour an 1 lb loaf tin.
    2. In a large bowl, mix flour, baking powder, sugar and salt. Rub in butter. Break 1 egg into a measuring jug and then fill to the 250ml line with milk. Add to dry ingredients and beat well. Add vanilla and lemon extracts.
    3. Pour mixture into tin. Bake at 180 C / Gas 4 for 30 minutes or until a skewer inserted into the centre of cake comes out clean.

    Get creative

    To flavour the cake, you could use just vanilla extract, if desired. You could also try using brandy, rum or orange extract instead! Or, to increase the lemon flavour, you could add a tablespoon of grated lemon zest.

    I had one egg, no pudding for children, some custard and usual cupboard ingredients.Looked this up, made it, put in vanilla extract and some almond essence, et voila! an excellent cake. Just had the last bit plain with a cuppa, very cakey, very moreish. Fantastic if you got the time for a filling or icing etc., thank you.  -  31 Mar 2013
