An old recipe from Gran. A very easy cake to make for afternoon tea. Enjoy simply as is with a hot cuppa!
To flavour the cake, you could use just vanilla extract, if desired. You could also try using brandy, rum or orange extract instead! Or, to increase the lemon flavour, you could add a tablespoon of grated lemon zest.
I had one egg, no pudding for children, some custard and usual cupboard ingredients.Looked this up, made it, put in vanilla extract and some almond essence, et voila! an excellent cake.
