About this recipe:A fabulous orange cake, made with a whole orange, peel and all. Very moist and delicious and perfect when citrus is in season!
1 whole orange, with peel
170g sultanas or raisins
5 tablespoons chopped walnuts
250g plain flour
200g caster sugar
1 teaspoon bicarbonate of soda
1 teaspoon salt
110g butter or margarine
5 tablespoons caster sugar
1 teaspoon ground cinnamon
4 tablespoons finely chopped walnuts
1 orange, sliced in rounds

Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm baking tin. Squeeze orange and reserve 75ml juice. In a food processor, grind orange peel and pulp, raisins and 5 tablespoons walnuts together. Set aside.
In a large bowl, blend flour, 200g sugar, bicarb, salt, milk, margarine and eggs. Beat 3 minutes at medium speed. Stir in orange-raisin mixture. Pour into prepared tin.
Bake in the preheated oven for 35 to 40 minutes, or until a skewer inserted into the centre of the cake comes out clean. Drizzle reserved orange juice over warm cake.
Combine 5 tablespoons sugar, cinnamon, and 4 tablespoons walnuts; sprinkle over cake. Garnish with orange slices.
