Whole orange cake

    A fabulous orange cake, made with a whole orange, peel and all. Very moist and delicious and perfect when citrus is in season!

    Serves: 24 

    • 1 whole orange, with peel
    • 170g sultanas or raisins
    • 5 tablespoons chopped walnuts
    • 250g plain flour
    • 200g caster sugar
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 250ml milk
    • 110g butter or margarine
    • 2 eggs
    • 5 tablespoons caster sugar
    • 1 teaspoon ground cinnamon
    • 4 tablespoons finely chopped walnuts
    • 1 orange, sliced in rounds

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm baking tin. Squeeze orange and reserve 75ml juice. In a food processor, grind orange peel and pulp, raisins and 5 tablespoons walnuts together. Set aside.
    2. In a large bowl, blend flour, 200g sugar, bicarb, salt, milk, margarine and eggs. Beat 3 minutes at medium speed. Stir in orange-raisin mixture. Pour into prepared tin.
    3. Bake in the preheated oven for 35 to 40 minutes, or until a skewer inserted into the centre of the cake comes out clean. Drizzle reserved orange juice over warm cake.
    4. Combine 5 tablespoons sugar, cinnamon, and 4 tablespoons walnuts; sprinkle over cake. Garnish with orange slices.

    I poured the juice from the can of oranges, it was juice not syrup, over the cake before adding the icing. I would recommend making twice the amount of icing.  -  16 Apr 2017


    SO delicious!! Wait 'til the next day (or even the day after) for trying, as this is one of those cakes which comes moister well after baking. Thanks for posting, Bea, this cake is sure to become a favourite in my household!  -  03 May 2015


    This is a yummy cake. I processed the walnuts and orange together. I also used currents instead of raisins, and left them whole. A nice light cake.  -  10 Feb 2001  (Review from Allrecipes US | Canada)
