250g plain flour
100g caster sugar
3 teaspoons baking powder
1/2 teaspoon salt
180ml orange juice
75ml vegetable oil
1 tablespoon orange zest

Heat oven to 200 C / Gas 6. Grease bottoms only of 12 muffin cups or line with cases.
In a medium bowl, combine flour, sugar, baking powder, orange zest and salt; mix well. In a small bowl, combine orange juice, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (mixture will be lumpy.)
Fill cups 2/3 full. Bake for 20 to 25 minutes or until skewer inserted in centre comes out clean. Cool 1 minute before removing from tin. Serve warm.
Very nice, moist muffins with a super orange taste. I didn't bother with the butter and cinnamon for the topping, and just sprinkled them with a pinch of brown sugar which was a lovely crunchy top. - 27 Sep 2012
