Basic Orange Muffins

    A basic orange muffin recipe, which is also dairy free. Enjoy these muffins on a Saturday morning, warm from the oven!

    Serves: 12 

    • 250g plain flour
    • 100g caster sugar
    • 3 teaspoons baking powder
    • 1/2 teaspoon salt
    • 180ml orange juice
    • 75ml vegetable oil
    • 1 egg
    • 1 tablespoon orange zest

    1. Heat oven to 200 C / Gas 6. Grease bottoms only of 12 muffin cups or line with cases.
    2. In a medium bowl, combine flour, sugar, baking powder, orange zest and salt; mix well. In a small bowl, combine orange juice, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (mixture will be lumpy.)
    3. Fill cups 2/3 full. Bake for 20 to 25 minutes or until skewer inserted in centre comes out clean. Cool 1 minute before removing from tin. Serve warm.

    Quick and easy to make - taste nice but a little on the dry side. The orange flavour is subtle. Would make again and maybe add a further 30 mls of juice and 50% more zest.  -  30 Jul 2014


    Very nice, moist muffins with a super orange taste. I didn't bother with the butter and cinnamon for the topping, and just sprinkled them with a pinch of brown sugar which was a lovely crunchy top.  -  27 Sep 2012


    The muffins are rather dry and lack the orange taste. Perhaps adding more orange juice would make the recipe better.  -  09 Dec 2014
