About this recipe: Pears are peeled and poached gently in a sugar syrup to enhance their flavour. Add a touch of vanilla and orange liqueur and you have a deliciously easy dessert that won't weigh your guests down.


Serves: 8 

  • 4 firm pears, halved and cored
  • 100g caster sugar
  • 1/4 teaspoon vanilla extract
  • 4 tablespoons Cointreau® or other orange liqueur

  1. Place the pears in a large saucepan. Fill with enough water to cover the pears by 2.5cm. Stir in the sugar and bring to the boil. Cook uncovered until the liquid has reduced into a light syrup, this may take up to 1 hour. Remove from the heat and stir in the vanilla. Cool until just warm, then stir in the liqueur and serve.


The pears can also be peeled and cooked whole if you prefer.
