    About this recipe: An easy veggie pasta salad with broccoli, carrots, mushroom and green pepper. If you don't want to use ranch dressing, use another creamy dressing such as Caesar or French.

    Ingredients
    Serves: 6 

    • 350g dry pasta
    • 90g chopped broccoli
    • 3 carrots, chopped
    • 80g fresh sliced mushrooms
    • 1/2 green pepper, chopped
    • 12 tablespoons ranch-style salad dressing
    • 40g grated Parmesan cheese

    Method
    Prep:10min  ›  Cook:8min  ›  Ready in:18min 

    1. Cook pasta according to package directions. During last 2 minutes of cooking, add broccoli and carrots to water. When pasta is al dente and broccoli and carrots are crisp but tender, drain water.
    2. Mix in mushrooms, green pepper, salad dressing and cheese. Season with salt and pepper to taste. Serve warm or cold.

    Parmesan cheese

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.

    We made this recipe as a "last minute dinner" and it turned out better than I expected...my daughter, age 5, helped herself to THREE servings!! Next time, I plan to double the receipe so that there are leftovers because the first time we made it, there were none. I might try adding cooked, cubed chicken and since our family loves bell peppers, I might add a few more of those too! Overall, it was delicious and easy to make.
