350g dry pasta
90g chopped broccoli
3 carrots, chopped
80g fresh sliced mushrooms
1/2 green pepper, chopped
12 tablespoons ranch-style salad dressing

Cook pasta according to package directions. During last 2 minutes of cooking, add broccoli and carrots to water. When pasta is al dente and broccoli and carrots are crisp but tender, drain water.
Mix in mushrooms, green pepper, salad dressing and cheese. Season with salt and pepper to taste. Serve warm or cold.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
