    About this recipe: An easy veggie pasta salad with broccoli, carrots, mushroom and green pepper. If you don't want to use ranch dressing, use another creamy dressing such as Caesar or French.

    Serves: 6 

    • 350g dry pasta
    • 90g chopped broccoli
    • 3 carrots, chopped
    • 80g fresh sliced mushrooms
    • 1/2 green pepper, chopped
    • 12 tablespoons ranch-style salad dressing
    • 40g grated Parmesan cheese

    1. Cook pasta according to package directions. During last 2 minutes of cooking, add broccoli and carrots to water. When pasta is al dente and broccoli and carrots are crisp but tender, drain water.
    2. Mix in mushrooms, green pepper, salad dressing and cheese. Season with salt and pepper to taste. Serve warm or cold.

    Parmesan cheese

    Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
