About this recipe: This is a low fat chocolate icing that is cooked briefly, then cooled to ice your favourite cake. It has a glossy finish that looks as good as it tastes.

Serves: 8 

  • 200g caster sugar
  • 1 pinch salt
  • 3 tablespoons cornflour
  • 250ml water
  • 30g cooking chocolate
  • 1 teaspoon vanilla extract
  • 15g butter

  1. In a saucepan over medium heat combine the sugar, salt, cornflour, water and chocolate. Stirring frequently bring to the boil and cook over low heat until thick. Remove from the heat and add the vanilla and the butter. Mix well. Let icing cool before icing your favourite cake.

Nice idea, I made this to top a flourless chocolate torte. The only thing I would say is it's a bit too sweet for my liking and could do with more chocolate. Maybe cocoa powder adding? Also, may be 'lower' fat but the amount of sugar is far from healthy.. - 17 May 2015
