Easy date and walnut cake

    A very easy date and walnut cake that serves 12. Wonderful with custard or cream. Try garnishing the cake with walnut halves before baking so that each square has a walnut in the centre when cut!

    Serves: 12 

    • 450g dates, pitted and chopped
    • 250ml boiling water
    • 1 teaspoon bicarbonate of soda
    • 225g butter
    • 200g caster sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 200g plain flour
    • 1 teaspoon baking powder
    • 120g chopped walnuts

    1. Preheat oven to 180 C / Gas 4. Lightly grease a 22x33cm tin. In a saucepan, combine dates, boiling water and bicarb. Let stand while mixing the cake mixture.
    2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour, baking powder and chopped walnuts. Stir in the date mixture. Pour cake mixture into prepared tin.
    3. Bake in the preheated oven for 50 to 60 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.

    I have a similar recipe, but mine uses only 1 cup of chopped dates. Also, I put 1/2 c choc chips in the batter, and sprinkled 1/2 c on top - mine was delish! Maybe the author really means 1 cup of dates? (1 lb = 2-1/2 cups pitted dates). But I have to give this 5* because it is so good!  -  25 Feb 2004  (Review from Allrecipes US | Canada)


    I made this recipe 3 days ago and the only difference was I used brown sugar instead of white. This cake came out alot browner but the texture and taste was amazing. I also didn't have the same amount of dates so used less (about 250gm). Cooked it for 50min on 180o. Everyone said it was an amazing cake so today am making another one.
