120ml vegetable oil
10 corn tortillas
225g finely shredded red cabbage

Preheat oven to 200 C / Gas 6.
Arrange fish fingers in a single layer on a baking tray, and bake 20 minutes in the preheated oven, or until crisp and golden brown. Remove from heat and cut into thirds.
Heat the vegetable oil in a frying pan over medium-high heat. Fry the tortillas until soft. Drain on kitchen paper.
Fill the heated tortillas with fish fingers, cabbage, tartar sauce and salsa to serve.
Instead of tartar sauce, serve with soured cream and grated Cheddar cheese.
