Ramen Noodle Salad

About this recipe: Celery, water chestnuts and green pepper give this chicken noodle salad a lovely crunch. Makes a nice change for lunch.

Serves: 12 

  • 4 (90g) packets ramen noodles (chicken flavour)
  • 120g celery, diced
  • 1 (225g) tin water chestnuts, drained and sliced
  • 1/2 red onion, diced
  • 1/2 green pepper, diced
  • 115g frozen green peas
  • 200g mayonnaise, or to taste

  1. Break noodles and cook as directed on packet. Drain and rinse noodles under cold water.
  2. In a large bowl, combine the noodles, celery, water chestnuts, red onion, green pepper and peas.
  3. Prepare the dressing by whisking together the mayonnaise and seasoning packet from the noodles. Pour over noodle and vegetable mixture and toss until well coated. Refrigerate until well chilled and serve.
