    About this recipe: This is my basic buttercream recipe for decorating cakes and cupcakes. It works perfectly. Add colouring and flavour extracts if you wish.

    Serves: 12 

    • 400g butter, softened
    • 950g icing sugar
    • 1/2 teaspoon salt
    • 2 teaspoons vanilla extract
    • about 225ml double cream

    1. In a mixing bowl, beat butter until fluffy. Add icing sugar and continue mixing until well blended.
    2. Add salt, vanilla and 175ml of the cream. Blend on low speed until moistened. Add additional cream if necessary. Beat at high speed until the icing is fluffy.
