Sarah's Banana and Walnut Muffins

    These make a great on-the-go breakfast or a mid-morning snack at the office.

    Makes: 12 muffins

    • 200g caster sugar
    • 120ml vegetable oil
    • 1 egg
    • 3 ripe bananas, mashed
    • 30g walnuts, chopped
    • 250g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt

    1. Preheat oven to 180 C / Gas 4. Place bun cases in muffin tin, or grease with a little butter.
    2. Mix sugar, oil and egg until creamy and light yellow. Add bananas and walnuts. Add flour, bicarbonate of soda and salt. Stir until completely smooth. Spoon the batter into the muffin tin.
    3. Bake for 30 to 40 minutes, until skewer poked in centre of a muffin comes out clean.

    Cooking time is too long they end up burnt if you cook them for 30 minutes. I would try 20 minutes and see how they are.  -  23 Oct 2011


    2nd time making these muffins, love them! I used 60g walnut and 100ml oil. Delicious!!!!  -  21 Oct 2013


    Make these often. 180c is too hot. Bake in fan oven 160c. Mine come out perfect every time  -  12 Feb 2014
