    About this recipe: This are like mini quiches without the pastry. They're a handy high protein snack for anyone on a low carb diet and you can make them with cooked ham instead of sausage. You can also top with Cheddar before baking them. I cook them in a muffin tin for portion control!

    Serves: 12 

    • 250g pork sausage or sausagemeat
    • 12 eggs, beaten
    • chopped green chillis from a jar
    • 1 small onion, minced
    • 1 teaspoon garlic granules
    • salt and pepper to taste

    1. Preheat oven to 180 C / Gas 4. Lightly grease a 12 -hole muffin tin.
    2. Place sausagemeat in a large, deep frying pan. Cook over medium high heat until evenly brown. Drain off any fat and set aside.
    3. In a large bowl, combine eggs, chillies, onion, garlic granules, salt, pepper and sausage; mix well. Spoon evenly into each muffin tray.
    4. Bake in preheated oven for 15 to 20 minutes, until egg has set. Eat warm or cold. Keep leftovers in the fridge.
