Garlic and feta flat bread

    This recipe for flat bread starts off in the bread machine but you finish it off on the barbecue, topped with garlic and feta. Delish!

    Serves: 10 

    • 300ml water
    • 2 tablespoons butter
    • 2 tablespoons caster sugar
    • 2 tablespoons milk powder
    • 1 1/2 teaspoons salt
    • 455g bread flour
    • 1 1/2 teaspoons dried active baking yeast
    • For the topping
    • 2 tablespoons olive oil
    • 2 teaspoons garlic granules (or finely minced garlic)
    • 120g feta cheese, crumbled

    1. Place the first set of ingredients into the pan of the bread machine in the order recommended by the manufacturer. Select DOUGH cycle; press START. Do not put in the olive oil, garlic or feta cheese.
    2. Preheat the barbecue for medium heat. When the cycle has ended, turn the dough out onto a lightly floured surface, and divide into 2 halves. Roll each half out into a circle that is about 26cm across. Brush the top of each circle with olive oil.
    3. Place the bread circles oil side down onto the barbecue. Brush the other side with olive oil, and watch carefully. When the bottom side is browned, turn over the bread, and barbecue the other side until golden. Sprinkle with garlic and feta cheese. Serve warm.

    I was looking for a good flatbread for some sandwiches and came across this recipe. I don't have a bread machine, so had to give it a shot without but it turned out great. In lieu of milk powder I modified the liquid to 3/4 C Water and 1/2 C Milk. I proofed the yeast in my Kitchen-Aid bowl with warm water and 1 Tbsp of the sugar. Once that was ready I mixed in the remaining ingredients, let the dough hook knead for awhile, then put the dough into a well oiled bowl and covered to rise for about an hour until double in size. Punched it down and then split into 6-8 balls of dough for flatbread and let those rise about 30-40 more minutes. Rolled each one out and oiled and grilled per the instructions (only takes a couple minutes per side). I topped with cooked chicken, bacon, cheddar, tomatoes and ranch dressing.
