    About this recipe: A simple side dish of shiitake mushrooms, garlic and herbs in a light stock-based sauce. Serve over pork or steak, or simply with plain rice. Also makes a nice toping for a jacket potato.

    Serves: 2 

    • 2 tablespoons olive oil
    • 4 cloves garlic
    • 8 shiitake mushrooms, chopped
    • 225ml vegetable stock
    • 2 tablespoons butter
    • 1 pinch dried Italian herbs, to taste
    • 1 pinch salt, to taste

    1. Heat the olive oil in a frying pan over medium heat, and cook the garlic just until golden. Mix in mushrooms, and cook for 10 minutes, until tender.
    2. Pour the stock into the frying pan. Stir in butter until melted. Season with dried Italian herbs and salt.
