    About this recipe: A classic, comforting pud.

    Ingredients
    Serves: 6 

    • 200g (7 oz) uncooked short-grain white rice or pudding rice
    • 1.4L (2 3/8 pints) hot semi-skimmed milk
    • 1/2 teaspoon salt
    • 100g (4 oz) caster sugar
    • 75g (3 oz) sultanas
    • 1/4 teaspoon ground nutmeg
    • 1 dessertspoon vanilla extract

    Method
    Prep:5min  ›  Cook:1hr  ›  Ready in:1hr5min 

    1. In the top of a double boiler, stir together rice, milk, salt, sugar, sultanas and nutmeg. Cook, stirring occasionally, over simmering water for 1 hour, until thick. Stir in vanilla and serve warm or cold.

    Altered ingredient amounts. Absolutely delicious. Either cinnamon or nutmeg is great. Added extra spice. Didn't have a double boiler used ordinary pot on very low fire. Stirred often. - 15 Sep 2008

    Used different ingredients. We really enjoy this pudding! Sometimes I use cardamom instead of nutmeg or cinnamon. - 15 Sep 2008

    I recently made this and thought it tasted really good. I made it with skimmed milk and had a problem with it not thickening. Some cornflour and water mixed together then added in did the trick. - 15 Sep 2008
