Tuna Jalapeno Toasties

    I mix tinned tuna with some onion, spread it on bread or muffins with some sliced jalapeno chilli peppers and cheese. Put it in a hot oven and the bread will toast and the cheese will melt into the tuna. It tastes delicious.

    Serves: 2 

    • 1 tin tuna, drained
    • 1/2 small onion, minced
    • 1/2 teaspoon pepper to taste
    • pickled jalapeno slices (from a jar)
    • 4 slices of bread or 2 muffins, split
    • 4 slices Cheddar cheese

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Preheat oven to 180 C / Gas 4.
    2. In a small bowl, combine tuna, minced onion and black pepper. Divide mixture onto bread or muffins. Arrange slices of jalapenos on each half. Top each with a slice of Cheddar. Place on baking tray.
    3. Bake in oven for 10 minutes, or until cheese begins to bubble.

    I am sorry but I just don't get all the enthusiasm about this recipe. I might as well have just eaten the tuna right out of the can. Needs celery, mayo, relish, garlic.     "Best tuna fish sandwich ever" was the review I got when I made these sandwiches! I messed up the recipe a little because I forgot to print it out, but it still turned out great! I accidentally used TWO cans of tuna, about 1/4 cup of minced onion and a whole (small) can of diced jalepenos. I added a squirt of whole grain mustard and a squirt of mayo (to keep it together better). I also used whole wheat bread instead of the English muffins.
