Macaroni Mince with Mushrooms

    An easy pasta dinner that the whole family will enjoy. Minced beef and macaroni pasta are cooked in a tomato-mushroom pasta sauce. Serve with garlic bread.

    Serves: 8 

    • 450g macaroni or pasta shells
    • 450g mince
    • 1 large onion, chopped
    • 475ml passata or sieved tomatoes
    • 200g sliced mushrooms, fresh or tinned
    • 2 teaspoons minced garlic
    • salt and pepper to taste
    • 1 (400g) chopped tomatoes

    1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in large saucepan.
    2. Meanwhile, in a large frying pan, cook the mince over medium heat; just before beef is browned, stir in onion.
    3. Add mince to pasta, and stir in passata, mushrooms, garlic, salt, pepper and chopped tomatoes. Cook over low heat, 10 to 15 minutes, or until heated through.

    I enjoy a far simpler variant of this recipe. Cook ground beef and add diced onions and green peppers at the end so they remain al dente. Simmer with canned tomatoes. Add elbow macaroni. This was the Slumgullion that I grew up with.  -  22 Jan 2004  (Review from Allrecipes US | Canada)

    This dish proved to be a quick and easy way to get dinner on the table tonight! My family all gave it a thumbs up. Of course, I changed it a little to reflect what I had on hand. :+) I used Rotini noodles, which picked up the flavor of the sauce well. I browned the ground beef, onion, garlic salt, and pepper together. Then, I added a can of tomato sauce, a can of diced tomatoes, and a can of mushroom soup. (I don't like mushrooms themselves, but like the added flavor the soup gave this dish.) My husband used Parmesan cheese on his plate, but the kids liked it just the way it was.
