About this recipe: This is a deliciously fresh sweet potato pie that my family loves. The hardest part is peeling the sweet potatoes - after that, everything just gets blended. The rum and butter give it a richer flavour.

    Serves: 8

    • 400g cooked sweet potatoes, mashed
    • 2 eggs
    • 300ml evaporated milk
    • 75g caster sugar
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 2 tablespoons rum
    • 4 tablespoons melted butter
    • 1 pastry case (or shortcrust pastry for 23cm pie)
