About this recipe:This is a deliciously fresh sweet potato pie that my family loves. The hardest part is peeling the sweet potatoes - after that, everything just gets blended. The rum and butter give it a richer flavour.
400g cooked sweet potatoes, mashed
300ml evaporated milk
75g caster sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 tablespoons rum
4 tablespoons melted butter
1 pastry case (or shortcrust pastry for 23cm pie)

Preheat oven to 220 C / Gas 7.
Blend sweet potatoes, evaporated milk, sugar, salt, cinnamon, nutmeg, rum, eggs and butter in a food processor until smooth. Pour mixture into pastry case.
Bake for 10 minutes in preheated oven. Reduce heat to 150 C / Gas 2. Bake for about 50 minutes more, or until the filling is firm.
