Gluten-free tahini cookies

    This recipe makes 3 dozen healthy biscuits. Be sure you buy 100% gluten free oats, available from health shops. The recipe calls for tahini (sesame seed butter that you can buy in any large supermarket). Feel free to add chopped apples, dried cranberries, raisins or dates.

    Makes: 36 biscuits

    • 90g tahini
    • 175g honey
    • 1/2 teaspoon ground cinnamon
    • 120g gluten free porridge oats
    • 60g chopped walnuts

    1. Preheat the oven to 180 C / Gas 4. Grease 3 baking trays.
    2. In a medium bowl, stir together the tahini, honey and cinnamon. Mix in walnuts and porridge oats until well blended. Drop by teaspoonfuls onto the prepared baking trays. Cookies should be about 5 cms apart as they will spread a little when baking.
    3. Bake for 10 minutes, or until edges are slightly brown. Cool on the baking tray for a few minutes before removing to wire racks to cool completely.
