Chocolate and coconut biscuit bars

    This traybake has a digestive biscuit base, then a sweet coconut layer, and is topped off with a layer of chocolate peanut butter. Very delicious!

    Makes: 24 

    • 110g butter
    • 125g digestive biscuits, crushed
    • 200g desiccated coconut
    • 1 (400g) tin sweetened condensed milk
    • 340g dark chocolate chips
    • 130g smooth peanut butter

    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Preheat oven to 180 C / Gas 4.
    2. In one 13x23cm baking dish, melt the butter. Sprinkle the digestive biscuit crumbs over the melted butter. Top with coconut, then the sweetened condensed milk and bake for 25 minutes or until golden brown.
    3. In a saucepan over low heat melt the chocolate chips and peanut butter together. Stir until creamy and pour over the baked bars. Let cool thoroughly then cut into bars. Garnish with more desiccated coconut. Store bars in an airtight container.

    can you use crunchy peanut butter?  -  28 Oct 2016


    SO DECADENT! It's sweet, chewy, and delicious, but you can't have too much at once because it's just SO HEAVY. I love it because it's not your average, boring cookie. TIP: one wrapped package of graham crackers (one box usually contains 2 wrapped packages) yields exactly 1.5 cups when crushed into crumbs!  -  18 Feb 2007  (Review from Allrecipes US | Canada)


    These are amazing!!! Super easy, super yummy, super impressive when you make them for an office function . Would also be great crumbled over vanilla ice cream. I typically don't like using the microwave, but I took the advice of others before me and melted the chocolate and peanut butter that way - one minute, stir, 30 seconds, stir, and you're done!  -  10 Dec 2004  (Review from Allrecipes US | Canada)
