Creamy chicken and mushrooms

    A quick and easy chicken recipe to make for large groups.

    Serves: 15 

    • 30g butter
    • 500g sliced mushrooms
    • 6 sliced shallots
    • 4 tablespoons port
    • 2 (400g) tins cream of mushroom soup
    • 375ml milk
    • 1 teaspoon Worcestershire sauce
    • 1/4 teaspoon cayenne pepper
    • 3 precooked chickens, skin removed and torn into pieces
    • 600ml soured cream

    1. Heat butter in pan and cook mushrooms and shallots until just soft. Add port, soup, milk, Worcestershire sauce and cayenne pepper.
    2. Bring to the boil and add chicken and soured cream. Reduce to low heat and warm through. Serve over rice.
