6 boneless, skinless chicken breasts
1/2 large onion, finely chopped
500g fresh mushrooms, sliced
4 tablespoons olive oil
1 pinch salt and fresh black pepper, to taste
1 clove garlic, chopped
120g mozzarella cheese, grated

Preheat oven to 200 C / Gas 6.
Heat 2 tablespoons oil in a large frying pan over medium-high heat. Sear chicken breasts briefly on both sides, about 5 minutes.
Meanwhile, in another large frying pan, heat 2 tablespoons oil over medium-high heat. Stir in mushrooms, onions and garlic; cook until they are nice and soft, about 5 minutes.
Pour contents of both frying pans into a baking dish, sprinkle cheese over the top, and bake about 5 minutes.
