Chicken with mushrooms and mozzarella

    Fry the chicken breasts to give them some colour, then pop them in the oven with a layer of mushrooms, garlic and onions, and a delicious cheesy topping. All done in around 20 minutes!

    Serves: 6 

    • 6 boneless, skinless chicken breasts
    • 1/2 large onion, finely chopped
    • 500g fresh mushrooms, sliced
    • 4 tablespoons olive oil
    • 1 pinch salt and fresh black pepper, to taste
    • 1 clove garlic, chopped
    • 120g mozzarella cheese, grated

    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Preheat oven to 200 C / Gas 6.
    2. Heat 2 tablespoons oil in a large frying pan over medium-high heat. Sear chicken breasts briefly on both sides, about 5 minutes.
    3. Meanwhile, in another large frying pan, heat 2 tablespoons oil over medium-high heat. Stir in mushrooms, onions and garlic; cook until they are nice and soft, about 5 minutes.
    4. Pour contents of both frying pans into a baking dish, sprinkle cheese over the top, and bake about 5 minutes.

    This is one of the best chicken dishes I've ever made. Of course, you do need to season most things you cook with salt and pepper. My 11yr old that never eats leftovers loved these. Luckily he shared them with me. My version I cooked the mushrooms, onions and garlic in the pan after I cooked the chicken.     This recipe was GREAT! I don't like mushrooms that much, but the mixture of garlic and onion with them made them delicious! I also cooked the mixture in the same pan as the chicken, and it gave the chicken a stronger taste.     Absolutely delicious. I try to minimize the clean up so after reading the other reviews I took their advice and cooked everything from stovetop to oven all in one pan, I also pounded the chicken.
