    About this recipe: Fry the chicken breasts to give them some colour, then pop them in the oven with a layer of mushrooms, garlic and onions, and a delicious cheesy topping. All done in around 20 minutes!

    Serves: 6 

    • 6 boneless, skinless chicken breasts
    • 1/2 large onion, finely chopped
    • 500g fresh mushrooms, sliced
    • 4 tablespoons olive oil
    • 1 pinch salt and fresh black pepper, to taste
    • 1 clove garlic, chopped
    • 120g mozzarella cheese, grated

    1. Preheat oven to 200 C / Gas 6.
    2. Heat 2 tablespoons oil in a large frying pan over medium-high heat. Sear chicken breasts briefly on both sides, about 5 minutes.
    3. Meanwhile, in another large frying pan, heat 2 tablespoons oil over medium-high heat. Stir in mushrooms, onions and garlic; cook until they are nice and soft, about 5 minutes.
    4. Pour contents of both frying pans into a baking dish, sprinkle cheese over the top, and bake about 5 minutes.
