Simple Pasta Sauce

    This is a delicious simple sauce which goes with anything. Serve over pasta, or use it for lasagne or pizza sauce. Freeze in small portions so you always have some on hand.

    Serves: 4 

    • 4 tablespoons olive oil
    • 4 cloves garlic, minced
    • 4 (400g) tins whole plum tomatoes
    • 175g (6 oz) tomato purée
    • handful chopped fresh parsley
    • 1/2 tablespoon salt
    • 100ml (4 fl oz) red wine

    Prep:15min  ›  Cook:15min  ›  Ready in:30min 

    1. In a large saucepan, warm olive oil over medium low heat and add garlic; cook for a few minutes, making sure to not brown the garlic.
    2. Pour tomatoes and purée into saucepan and stir; cook over medium heat for 10 minutes. Add parsley, salt and wine; reduce heat to low and simmer, stirring occasionally, until sauce thickens; serve.

    Something else. I added sliced mushrooms and finely chopped pepper to add extra flavour and texture. I will also try adding a small amount of chopped courgette next time I make this  -  03 Aug 2009
