About this recipe: A delicious spicy pasta sauce that you don't need to go to an Italian restaurant to get! This makes quite alot so it's great for a dinner party.


Serves: 8 

  • 375ml vodka
  • 1 teaspoon dried chilli flakes
  • 2 tablespoons olive oil
  • 300g prosciutto or cooked ham, sliced
  • 1 large clove garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon salt and pepper to taste
  • 2 (400g) tin tomatoes, with juice
  • 400g passata
  • 250ml double cream

  1. In a small bowl, combine vodka and red pepper flakes. Set aside for 1 hour.
  2. Heat olive oil in a large frying pan over medium heat. Warm the prosciutto or ham, garlic, parsley, basil, salt and pepper for 1 or 2 minutes. Pour in vodka mixture, and simmer 10 minutes. Add tinned tomatoes and passata. Simmer 15 minutes. Stir in cream, and warm through.
