Spinach, English pea and feta salad

About this recipe: A simple, fresh salad that comes together in less than 5 minutes. The perfect complement to almost any dish.


Serves: 4 

  • 1 (300g) bag spinach
  • 150g (5 oz) fresh garden peas
  • 4 tablespoons olive oil
  • 1 1/2 lemons, juiced
  • 100g (4 oz) feta cheese, crumbled
  • salt and freshly ground black pepper to taste

  1. In a large bowl, toss together the spinach, peas and olive oil until evenly coated. Add the lemon juice, feta and salt and pepper, and toss again.
