Chocolate Cookies with White Chocolate Chips

    Firm favourite in our house and often requested on birthdays! No melting of chocolate needed as you use cocoa.

    Makes: 36 cookies

    • 225g unsalted butter
    • 200g caster sugar
    • 165g dark brown soft sugar
    • 2 eggs
    • 7 tablespoons cocoa powder
    • 225g plain flour
    • 2 teaspoons bicarbonate of soda
    • 360g white chocolate chips

    1. Preheat oven to 180 C / Gas 4. Grease or line 2 baking trays.
    2. In a large bowl, cream together the butter, brown sugar and caster sugar until light and fluffy. Add the eggs one at a time, beating well with each addition. Combine the cocoa, flour and bicarbonate of soda; gradually stir into the creamed mixture. Finally, fold in white chocolate chips. Drop by rounded spoonfuls onto lined baking trays.
    3. Bake for 8 to 10 minutes, until puffy but still soft. Allow cookies to cool on tray for 5 minutes before removing to a wire cooling rack.

    An incredibly easy and delicious recipe - these cookies are best enjoyed soft and gooey so make sure you don't overcook. A favourite with my friends and family alike, this has become my signature baking recipe.  -  30 Sep 2012


    Instead of using chicken eggs I used duck this made them extra chewy and yummy !!x but an amazing recipie I would do this again  -  11 Jun 2015
