225g unsalted butter
200g caster sugar
165g dark brown soft sugar
7 tablespoons cocoa powder
225g plain flour
2 teaspoons bicarbonate of soda
360g white chocolate chips

Preheat oven to 180 C / Gas 4. Grease or line 2 baking trays.
In a large bowl, cream together the butter, brown sugar and caster sugar until light and fluffy. Add the eggs one at a time, beating well with each addition. Combine the cocoa, flour and bicarbonate of soda; gradually stir into the creamed mixture. Finally, fold in white chocolate chips. Drop by rounded spoonfuls onto lined baking trays.
Bake for 8 to 10 minutes, until puffy but still soft. Allow cookies to cool on tray for 5 minutes before removing to a wire cooling rack.
